The Basics: Making The Sponge

  1. Sponge basics: get bread bowl & lid from below sink.

  2. Put in two teaspoons of yeast.

  3. Add 4 cups warm, this is critical--baby bottle soothing to the skin warm--water (I nuke some and cool down to that temp); can be about 4 cups, none of the measurements need to be precise.

  4. Add about 2 cups of flour from bag on counter--again about is fine so don't worry about sifting or leveling off.

  5. Finally mix well--I use the small wisk.

  6. Close lid tight and leave on counter.
